Tasty snacks are a way of life in India and, in the West, will make a delightful change from crisps or salted nuts served with pre-dinner drinks. More substantial traditional treats, such as samosas (deep-fried pastry parcels) and onion bhaijis (crisp onion fritters), also make great starters, unusual lunches and fabulous party fare. Rice is always served with Indian meals, often just plainly boiled. 

More elaborate rice dishes with herbs, spices, nuts and other ingredients are served on special occasions. The most popular type of rice is basmati, a fragrant long-grained variety that is grown in the foothills of the Himalayas. If you have time, rinse it in several changes of cold water and soak for 30 minutes before cooking. Bread is almost as essential to a meal as rice and is prepared daily in Indian homes.

Authentic flat bread is surprisingly quick and easy to make, and even the yeast dough for slipper-shaped naan requires little effort and time, apart from allowing it to rise. A wonderfully contrasting mixture of tastes and textures characterizes an Indian meal and this is further enhanced with savoury chutneys, pickles and relishes.

Whether a cooling yogurt-based raita or a hot lime pickle, these flavorsome accompaniments add the final touch of perfection.
