Indian Chicken Dishes
One of India's most popular meats, chicken is an excellent choice for curries and for cooking with subtle, aromatic spice blends. It can sometimes be rather bland so combining it with other flavoursome ingredients, for almonds, garlic and yogurt to onions, ginger, chilies, cumin and coriander, turns it into a real feast.
Indian cooks will often choose the dark meat, which tends to have more flavour, but diced chicken breasts are ideal for stir-frying and can be substituted for thigh meat in other recipes according to taste.
Chicken is very versatile and is equally delicious roasted, braised, stir-fried or grilled on skewers - all Indian style. It is frequently marinated, often only briefly, or rubbed with a dry spice mixture before cooking to give the dish a real depth of flavour. Because of its texture, it works especially well with creamy mixtures, such as the perennially popular chicken korma from northern India. It is also great in spicier curries that range from the from the fragrant and mild to the fiery hot.
Added to this, it goes well with a wire range of accompaniments-plan boiled rice dhals and other lentil dishes, Indian breads and salads - so it's easy to add variety to the family menu.
